SW Massaman beef and potato curry

This is a really hearty warming dish, I make no claims for it's complete authenticity as had to change the recipe slightly to make it Slimming World friendly but it's meat and potatoes in a spicy sauce and very easy to make. You can get Massaman curry paste in some supermarkets I got mine from Sainsburys and have seen it in other places the syn value varies so check with Slimming World website syn values if you aren't sure the Sainsburys one is only 1/2 syn per tablespoon.

Coconut milk is high in syns too but 100ml is 4 1/2 syns and it freezes well so I get a 400ml can of light coconut milk and freeze it in 100ml portions in small plastic tubs so it's economical as well. The fish sauce used is a Thai ingredient you only need a small amount and again it's available in many supermarkets but if you can't get it you can leave it out.

Massaman beef and potato curry
  • 700g-1kg lean diced beef
  • 2 large onions (sliced)
  • 2 tbsp Massaman curry paste 
  • 100ml light coconut milk (see in notes above)
  • 4 large potatoes (peeled and diced)
  • 1 bag baby spinach (washed)
  • 1 tbsp thai fish sauce
  • low calorie spray oil




Take a large ovenproof and hob safe casserole dish with a lid and place on the hob over a medium heat. Spray lightly with the oil and add the beef and onions and fry until the beef has slightly browned and the onions are soft. 
Add the Massaman curry paste and fry for a few moments then add the beef stock and coconut milk  stir well and bring to a boil. Put on the lid and place in the oven at Gas 5 /190/375 and cook for one hour.
Take out of the oven and place back on the hob over a medium heat (be very careful the dish is HOT !!)
Remove the lid and add the diced potatoes, stir well leave to simmer for about 20-30 minutes until the potatoes are soft then stir in the bag of spinach which looks like a lot but it wilts down quite quickly.
Add the fish sauce and taste in case needs a little more or if not using the fish sauce taste as you may need a little salt.


Serves 4 generously at 1.5 syns per person.

Nigellas sweet potato macaroni cheese

This is proper comfort food so warming and filling and although its not syn free I have adapted the recipe to keep it as low syn as possible but keeping all the tastiness of the original recipe. The recipe serves 4 but you could easily make it serve 6 if served it with something like Slimming World sausages and vegetables.


Nigellas sweet potato and macaroni cheese


500g sweet potatoes (peeled and cut into cubes)
300g dried macaroni
2 tbsp cornflour
500ml skimmed milk
1 tub quark
160g reduced fat cheddar cheese (grated)
1/4 tsp paprika
salt and pepper


Preheat oven gas 6 /200/400. Put a large saucepan of water on to boil and add a tsp or two of salt once boiling add the sweet potato and cook for about 10 minutes then take out the sweet potato with a slotted spoon and put into a large bowl, Keep the water boiling and add the macaroni and stir well and cook for 8-10 minutes until cooked but still quite firm then drain in a colander.



Using a fork mash the sweet potato in the bowl till mashed but not pureed. Add the tub of quark, the cooked macaroni and 100g of the grated cheese and mix well.

In a saucepan place the milk and the cornflour and bring to the boil, Keeps whisking all the time until the sauce is thick and cook for a couple of minutes to lose the floury taste. Season with salt and pepper then add to the sweet potato, macaroni and cheese mixture and again mix together very well. Taste for seasoning  (I found it needs quite a lot of salt and pepper. )

Tip it all into a large casserole dish and sprinkle the remaining 60g of grated cheese on top and sprinkle on the quarter tsp paprika,

Place the casserole dish on a baking tray and bake in the oven for 30 minutes until browned and hot.



Serves 4 at 3.5syns per portion if using the cheese for your Healthy Extra.

FIRST SW DESSERT IVE MADE AND IT WAS SOOOO NICE (2 SYNS +HEB) ITS 2 DOUBLE CHOCOLATE ALPEN LIGHT BARS MELTED, RASPBERRIES, AND FF FROMAGE FRAIS MIXED WITH A WHITE CHOC OPTIONS AND A BIT OF SPLENDA AND THEN LAYERED UP. I INTENDED TO USE QUARK BUT ASDA WAS SOLD OUT WHEN I WENT.

Beef Mince Curry (2015)






Serves 4

Ingredients

1 Onion, finely sliced (s)
1 Knorr Dark beef stockpot
1 Tsp Cumin
1 Tsp Coriander
1 Tsp Turmeric
1 Tbsp. Hot madras curry powder
1 Tbsp. Ginger paste
1 Tbsp. Garlic paste
1 Tbsp. Tomato puree (s)
400g Chopped tomatoes (s)
500g Beef Mince (5% or less) (p)




Method

In a frying pan, sprayed with frylight, cook the onion, garlic & ginger until the onions are soft, add the mince & cook until the meat is browned all over then add the stockpot, mix until it colours the beef.
Add the spices, tomatoes & tomato puree, cook for 20 mins until the mince is cooked. Serve with your favourite rice.

Garlic and thyme chicken with vegetable penne



Slimming World are known for coming up with quick and healthy meal ideas that the whole family can enjoy - and they've done it again with this delicious garlic and thyme chicken with vegetable penne. Ready in just 20 minutes, this speedy pasta supper is perfect as a nutritious midweek meal after work or school.

Ingredients

  • 4 skinless and boneless chicken breasts
  • 2 tsp dried thyme
  • 2 garlic cloves, crushed
  • 1 tsp dried red chilli flakes
  • zest and juice of 1 lemon
  • salt and freshly ground black pepper
  • 500g dried penne pasta
  • 400g runner beans, trimmed and diagonally sliced
  • 100g prepared chopped kale



Method

  1. Preheat the grill to medium-high.
  2. Put the chicken breasts in a bowl with the thyme, garlic, chilli flakes, lemon zest and juice. Season and toss to coat well.
  3. Arrange the chicken on a grill rack in a single layer and grill for 6 minutes on each side or until cooked through.
  4. While the chicken is under the grill, cook the pasta according to the packet instructions, adding the beans and kale for the final 4 minutes. Drain, season and divide between warmed plates.
  5. Slice the chicken thickly and serve with the vegetable penne.

Slimming World's pear and rhubarb crumble


Slimming World's pear and rhubarb crumble is a delicious guilt-free dessert that can be rustled up in no time. The perfect Sunday treat that can be enjoyed with a naughty drizzle of custard. This pud can be cooked in just 30 mins which makes it a rather speedy dessert.

Ingredients

  • 2lb/908g rhubarb, cut into 2in/5cm pieces
  • 11oz/312g pears, peeled, cored and sliced
  • Juice of 1 orange, plus 1 tsp finely grated zest
  • 6 tbsp artificial sweetener
  • 1 tsp ground cinnamon
For the topping:
  • 1oz/28g low-fat spread
  • 2 tbsp artificial sweetener
  • 2oz/57g plain flour



Method

  1. Preheat your oven to 180C/350F/Gas 4. Place the rhubarb in a medium-size pie or glass dish. Add the pear slices, orange juice and zest, and toss together to combine. Sprinkle over the sweetener and cinnamon, and cook in the oven for 10-12 minutes.
  2. Meanwhile, make the topping by placing the low-fat spread, sweetener and flour in a bowl. and rubbing together with your fingertips until the mixture resembles breadcrumbs.
  3. Remove the fruit from the oven. Sprinkle over the topping and cook for a further 10-12 minutes or until lightly golden. Allow to cool slightly before serving - its tastes great with a dollop of low-fat, ready-made custard), served warm or cold.

Slimming World's turkey tikka skewers



These Slimming World's turkey tikka skewers are a great way of using up leftover turkey from your Christmas feast. They also make the perfect guilt-free party food for sharing with friends and family. Each cut of turkey breast is infused with ginger, lime and garlic - delicious and flavoursome.

Ingredients

  • 200g fat free natural yogurt, plus extra to serve
  • 3 tbsp tikka or tandoori curry powder, plus extra to serve
  • 3 garlic cloves, finely grated
  • 3cm piece of root ginger, peeled and finely grated
  • Juice of 2 limes, plus wedges to serve
  • Salt and freshly ground black pepper
  • 800g turkey breast fillets, cut into bite-sized pieces
  • 2 red peppers, halved, deseeded and cut into bite-sized pieces
  • Small handful of finely chopped fresh coriander, to garnish



Method

  1. Mix the yogurt, tikka or tandoori powder, garlic, ginger and lime juice in a large bowl. Season to taste, add the turkey and stir to coat well. Cover and marinate in the fridge for 20 minutes or overnight if time permits.
  2. Preheat the grill to medium-hot. Thread the turkey chunks and peppers on to 12 metal skewers (or wooden skewers soaked in water for 20 minutes to stop them burning).
  3. Grill for 6-8 minutes on each side or until the edges are lightly charred in places and the turkey is cooked through.
  4. Arrange the skewers on a serving platter, scatter over the coriander and serve hot with lime wedges and a bowl of fat free natural yogurt sprinkled with tikka or tandoori curry powder.

Slimming World's mulled wine trifle




Slimming World's mulled wine trifle has a generous layer of low-fat custard, heaps of mixed berries and red wine for flavour, making a festive treat to make for Christmas Day

Ingredients

  • 8 sheets of leaf gelatine
  • 11.5g sachet of sugar-free raspberry jelly crystals
  • 1cm piece root ginger, peeled and grated
  • 1 cinnamon stick
  • 1 star anise
  • 2 cloves
  • 6 cardamom pods
  • 100ml red wine
  • 1 tsp sweetener
  • grated zest of 1 orange
  • 400g mixed berries, thawed if frozen
  • 400g low fat custard from a can or carton
  • 500g fat free natural fromage frais
  • 1 tsp vanilla bean extract
  • 1 level tsp edible gold and silver decorations



Method

  1. Put the gelatine sheets into a bowl of cold water and leave for 10-12 minutes or until softened.
  2. Meanwhile, stir the jelly crystals into 400ml of boiling water and set aside.
  3. Place a saucepan over a low heat and add the ginger, cinnamon stick, star anise, cloves, cardamom pods, red wine, sweetener and orange zest. Heat until hot but not boiling.
  4. Squeeze the excess water out of the gelatine sheets and put the sheets into a large bowl.
  5. Strain the wine mixture through a sieve onto the gelatine sheets then add the jelly mixture, stir well and leave to cool.
  6. Put the fruit into a large glass serving bowl and pour in enough of the cooled jelly mixture to come about two-thirds of the way up the side, leaving room for the custard and fromage frais (you can use any leftover jelly mixture to make individual jellies). Chill overnight.
  7. Spoon the custard over the jelly, then whisk together the fromage frais and vanilla and spoon on top. Scatter over the edible decorations to serve.

Ingredients

  • 60g dark plain chocolate
  • 3 eggs, separated
  • 3-4 tbsp sweetener
  • 2 tbsp dark rum
  • 4 tbsp fat free natural fromage frais, sweetened to taste
  • 1 level tbsp chocolate sprinkles, to decorate
  • 4 white chocolate stars, to decorate


Method

  1. Melt the chocolate in a heatproof bowl over a pan of simmering water then leave to cool for 10 minutes.
  2. Beat the egg yolks, sweetener and rum into the cooled chocolate.
  3. Whisk the egg whites until just stiff but not too dry then fold into the chocolate.
  4. Transfer the mixture into small serving glasses (shot glasses are ideal) and chill for 1 hour or until set.

Slimming World's spicy hot smoke salmon noodles

It doesn't take long to whip up Slimming World's spicy hot-smoked salmon noodles. This healthy stir-fry combines salmon fillets with a light soy sauce and lots of veggies, including onion and carrot. It's really easy to make and is the perfect mid-week meal when you're in the mood for something low on fat but not on flavour.


Ingredients

  • 350g dried egg noodles
  • low calorie cooking spray
  • 1 onion, halved and thinly sliced
  • 1 large carrot, peeled and finely diced
  • 1 garlic clove, crushed
  • 1 tsp ground ginger
  • 1 tbsp mild or medium curry powder
  • 400g frozen sliced mixed peppers
  • 4 tbsp light soy sauce
  • salt and freshly ground black pepper
  • 300g skinless hot-smoked salmon fillet, roughly flaked
  • Small handful of chopped fresh coriander
  • Limes wedges, to serve


Method

  1. Cook the noodles according to the packet instructions then drain and set aside.
  2. Meanwhile, spray a non-stick wok or large frying pan with low calorie cooking spray and place over a high heat.
  3. Stir-fry the onion and carrot for 3 minutes or until softened, then add the garlic, ginger, curry powder and peppers and stir-fry for 4 minutes or until just beginning to soften.
  4. Add the drained noodles and about 2 tablespoons of water and toss everything together. Add the soy sauce, season and stir-fry for another minute.
  5. Add the salmon and stir-fry for 2 minutes or until piping hot. Remove from the heat, scatter over the coriander and divide between shallow bowls or plates.
  6. Serve hot with lime wedges to squeeze over.

Slimming World's green pea and mint soup

Slimming World's green pea and mint soup is delicious, simple to make and packed full of veggies, including peas, potatoes and onion. Ready in just 30 mins, this soup is the perfect healthy homemade option for lunch. Finish with a dollop of fat-free natural yogurt.

Ingredients

  • 850ml vegetable stock
  • 1 large onion, chopped
  • 1 large potato, peeled and cubed
  • 450g frozen peas
  • Handful of fresh mint leaves, plus extra to garnish (optional)
  • Salt and freshly ground black pepper
  • 4 tbsp fat-free natural yogurt


Method

  1. Place the stock, onion and potato in a large pan and bring to the boil. Simmer for 10 minutes, stirring occasionally.
  2. Add the peas to the pan along with the mint. Bring back to the boil, reduce the heat and simmer for a further 10 minutes, stirring occasionally.
  3. Leave the soup to cool slightly then blitz with a stick blender until smooth. Season with salt and freshly ground black pepper and reheat. Stir in the yogurt.
  4. Serve straight away or take the soup on a picnic or walk. Reheat before you leave home and keep hot in a vacuum flask until you’re ready to eat. Garnish with mint leaves, if you like.

Mexican chilli chicken cups

These flavoursome Mexican chilli chicken cups by Slimming World are really simple to make and ideal if you fancy something different for dinner. The chicken mixture is spiced with cumin, paprika and red chillies. Serve your cups with rice or quinoa.



Ingredients

  • low calorie cooking spray
  • 2 garlic cloves, finely chopped
  • 1 red onion, halved and thinly sliced
  • 1 large red pepper, deseeded and thinly sliced
  • 1 red chilli, deseeded and finely chopped
  • 1tsp ground cumin
  • 1tsp paprika
  • 4tbsp canned chopped tomatoes
  • 4tbsp tomato purée
  • 4 cooked skinless and boneless chicken breasts, diced
  • small handful chopped fresh flatleaf parsley, to garnish
  • 8 large iceberg lettuce leaves
  • lime wedges, to serve



Method

  1. Heat a large non-stick frying pan and spray with low calorie cooking spray.
  2. Add the garlic, onion, red pepper, chilli, cumin, paprika, chopped tomatoes, tomato purée and chicken and stir-fry for 6 minutes or until the mixture is hot and the vegetables are just tender.
  3. Season well and scatter over the parsley.
  4. Spoon the chicken mixture into the lettuce leaves, fold them over to enclose the filling and serve with lime wedges and boiled rice.

Slimming World's leek macaroni cheese


Slimming World's leek macaroni cheese is really simple to make taking only 20 mins in total - perfect if you're looking for a speedy, healthy supper during the midweek rush. The fresh chives and hint of mustard powder gives this dish a warming flavour.

Ingredients

  • 500g dried macaroni
  • 2 trimmed leeks, thinly sliced
  • 200g quark
  • 200ml boiling vegetable stock
  • 1tbsp onion granules
  • 2 garlic cloves, crushed
  • 1tsp mustard powder
  • small handful chopped fresh chives
  • 50g reduced fat Cheddar cheese, grated


Method

  1. Cook the macaroni according to the packet instructions, adding the leeks for the last 3 minutes of the cooking time. Drain and return to the pan.
  2. Meanwhile, preheat the grill to medium-high.
  3. Put the quark, stock, onion granules, garlic, mustard powder, chives and three-quarters of the cheese in a small pan and whisk to mix together. Heat gently until the mixture is fairly smooth and season well. Stir the sauce into the drained macaroni and leek and toss to mix well.
  4. Spoon the macaroni mixture into four individual heatproof dishes arranged on a baking tray (or use a shallow casserole dish). Sprinkle over the remaining cheese, season and grill for 4 minutes or until golden and bubbling. Serve hot with salad or vegetables of your choice.

Slimming World's raspberry meringues


Meringue usually takes well over an hour to make but Slimming World’s super-speedy version cooks in less than 20 minutes – and it’s the ideal topping for deliciously sweet raspberries. This recipe serves 4 people and would be the perfect treat for friends when it's your turn to host dinner.

Ingredients

  • 4 sponge fingers, roughly broken up
  • 450g frozen raspberries, thawed
  • 1tbsp sweetener
  • 3 egg whites



Method

  1. Preheat the oven to 220C/200C fan/gas 7.
  2. Divide the sponge fingers between 4 heatproof ramekins.
  3. Lightly crush the raspberries, stir in half the sweetener and spread the mixture over the sponge fingers.
  4. In a clean bowl, whisk the egg whites with the remaining sweetener until stiff and glossy. Spoon the mixture over the raspberries and bake for 8 minutes or until lightly golden.
  5. Dust with icing sugar if you like (1 Syn per level teaspoon). These are best served hot.

Hearty and warming, Slimming World's chicken soup is really simple to make. Packed full of flavours, this is comfort food at its best. It's a guilt-free lunch or light dinner that takes under an hour to rustle up. Serve with crusty bread.

Ingredients

  • 25g margarine, such as Flora Light
  • 1 large white onion, peeled and chopped
  • 25g plain flour
  • 900ml chicken stock
  • 1 leek, trimmed and chopped
  • ¼ cabbage, chopped
  • ½ small cauliflower, chopped
  • 250g potatoes, peeled and chopped
  • 100ml skimmed milk
  • 225g cooked skinless and boneless chicken breast, chopped
  • chopped fresh chives, to garnish



Method

  1. Melt the margarine in a saucepan then stir in the onions. Add the flour and gradually pour in the stock.
  2. Add the vegetables and simmer for 30 minutes until cooked through.
  3. Place the soup in a blender or food processor and blend until smooth, then pass through a fine sieve.
  4. Season to taste, then add the milk and chopped chicken.
  5. Warm for 10 minutes to heat through and serve sprinkled with chives.

Slimming World's chocolate brandy pots

Slimming World's chocolate brandy pots are really easy to make with yogurt as a base and are ready in just 20 minutes. Each pot is flavoured with a rich dark chocolate and hint of brandy.
 

Ingredients

  • 35g dark chocolate, roughly chopped
  • 175g quark
  • 1 tbsp sweetener
  • ½ tsp brandy
  • ½ tsp vanilla extract
  • ½ 175g pot Muller Light Vanilla yogurt
  • 2 cherries



Method

  1. Place the chocolate in a heatproof bowl over a saucepan of lightly simmering water and heat for 8-10 minutes or until melted, taking care that the base of the bowl does not touch the water.
  2. Put the quark in a blender or food processor with the sweetener, brandy and vanilla extract. Scrape in the melted chocolate and blend until smooth.
  3. Transfer this mixture into 4 small dessert glasses or ramekins, spoon over the vanilla yogurt and top with a cherry.
  4. Top with a dusting of cocoa powder and icing sugar.
  5. These chocolate pots are even tastier after a bit of time in the fridge so if you can, make them in advance and chill until you’re ready to eat.

Slimming World's tomato, lentil and vegetable soup makes a filling chunky soup made with curry spices and ginger. It's so easy to make, ready in just 30 minutes 

Ingredients

  • low calorie cooking spray
  • 1 onion, peeled and finely chopped
  • 2 garlic cloves, peeled and crushed
  • 2cm piece root ginger, peeled and finely grated
  • 2 celery sticks, finely chopped
  • 1 large potato, peeled and cut into 1.5cm dice
  • 1 large carrot, peeled and cut into 1.5cm dice
  • 600ml boiling hot vegetable stock
  • 1 tbsp mild curry powder
  • 125g dried red lentils, rinsed and drained
  • 600ml passata
  • freshly chopped coriander, to serve


Method

  1. Spray a large saucepan with low calorie cooking spray and place over a high heat. Add the onion, garlic, ginger, celery, potato and carrot and stir-fry for 1-2 minutes.
  2. Add the remaining ingredients, except the seasoning, and bring to the boil. Cover and simmer gently for 15-20 minutes or until the lentils are cooked. Season well and serve sprinkled with coriander

Slimming World's rustic garlic chicken tray bake


This delicious family-sized Slimming World's rustic garlic chicken tray bake is simple and healthy all in one. It may take some time to make but is well worth the effort. This recipe uses chicken thighs which means it shouldn't break the bank to make. Serving 6 people, this dish would make the perfect roast dinner alternative with less washing up!

Ingredients

  • Low calorie cooking spray
  • Salt and freshly ground black pepper
  • 12 large skinless chicken thighs
  • 600g Desirée potatoes, peeled and cut into 2.5mm thick slices
  • 800g medium vine tomatoes, halved
  • 2 courgettes, thickly sliced
  • 3 large onions, peeled and thickly sliced
  • 4 garlic cloves, peeled and finely chopped
  • 4-5 small rosemary sprigs
  • 4tbsp finely chopped fresh parsley
  • 1tsp dried red chilli flakes
  • Finely grated zest and juice of 1 lemon
  • 250ml chicken stock


Method

  1. Preheat the oven to 180°C/Fan 160°C/Gas 4. Spray a large frying pan with low calorie cooking spray and place over a high heat.
  2. Season the chicken thighs, add to the pan and cook for 2-3 minutes on each side. Remove with a slotted spoon and set aside.
  3. Spray the potatoes with low calorie cooking spray and add to the pan in a single layer. Cook for around 5 minutes on each side until lightly browned. Remove from the heat.
  4. Spray a medium roasting tray with low calorie cooking spray and layer the base with the tomatoes, courgettes, onions and potatoes.
  5. Place the chicken on top of the vegetables in a single layer and sprinkle over the garlic, herbs, chilli flakes and the lemon zest and juice.
  6. Pour the stock over the chicken and vegetables, cover with foil and bake in the oven for 1½ hours until the potatoes are soft and the chicken is tender, removing the foil for the last 10 minutes of cooking.
  7. Bring the tray to the table and let everyone help themselves.
