Straight away I'll say even though these are yummy they aren't the traditional sugar and butter laden cupcakes as they only work out at 1/2 syn each!
There has been a recipe for a 1/2 syn roulade cake doing the rounds at Slimming World for years and this cupcake recipe is a variation of this and it's a great way to satisfy a sweet tooth. As the whole recipe for the cake mixture is only 1/2 syn that's negligible when this recipe makes 12 cupcakes so the half a syn comes from the white chocolate chips I used on top ....yes REAL chocolate : )
Chocolate is 6 syns per 25g so I weighed out that amount of chocolate chips and divided them between the cakes , with the chocolate and the strawberries these really are a treat.
PS: I realised too late I didn't include the vanilla I used in the photo ..sorry
Strawberry and white chocolate cupcakes
4 large eggs (separated into whites and yolks in separate bowls)
4 tbsp granulated sweetener
1/2 tsp vanilla essence
1 tub quark
1 tsp baking powder
topping
25g white chocolate chips
2 tbsp granulated sweetener
1/2 tsp vanilla essence
strawberries
Pre heat the oven to gas 4/ 350/180 , Whisk the egg whites until very stiff then set aside, In another bowl add the sweetener, 1/2 tsp vanilla essence and 1/2 tub of quark and mix well.
Add the egg whites to the yolk mixture and fold in gently with a metal spoon to keep the mixture light and airy.
Place spoonfuls of the mixture in cupcake cases in a cupcake tin and bake for 20 minutes and leave to cool.
Place the rest of the quark with the 2 tbsp sweeter and 1/2 tsp vanilla essence in a bowl and beat well then use this to top the cooled cupcakes, Top with a strawberry and the chocolate chips.

I think you forgot to mention where to add the egg yolk, is it to the sweetner, quark and vanilla, these do look delicious, cant wait to try them
