This is a quick simple dinner to make from leftover cold rice and you can add in whatever bits and pieces you have in the fridge. I used ASDA Chinese chicken chunks which I thought gave it a more Chinese flavour but you could use a bit of leftover chicken or beef or any meat really ham would be good too.
It's really important the rice you use is cooked and cold if you use hot rice it sticks together and goes clumpy. You can even use frozen rice straight from the freezer as long as you make sure its heated right through so if you have frozen leftover rice you can make dinner in about 15 minutes.
Special fried rice
2 eggs
approx 8-10 oz cold cooked rice
3oz prawns
1 pack ASDA Chinese chicken chunks (or about 4oz of any leftover cooked meat) chopped
3 spring onions (sliced)
3oz frozen peas
spray oil
salt and pepper
Beat the eggs well and add 1/2 tsp salt and 1/2 tsp pepper . Heat a wok or large frying pan and add some spray oil .
Scramble the eggs by stirring them around in the wok then add the cooked rice. Keep stirring and moving the rice around for a few minutes then add the spring onions and peas, Keep it moving and stirring so it doesn't stick then add the prawns and chicken and carefully mix everything together until everything is hot.
Serve immediately.
