No Bridget Jones turkey curry buffet jokes please! Seriously I love making turkey curry after Christmas and this recipe is surprisingly (at this time of year) slimming world friendly : )
2 large onions (sliced)
1lb of leftover cooked turkey (diced)
1 tin chopped tomatoes
some fresh tomatoes (if you have any left over)
1 pint chicken stock
2 tbsp medium hot curry powder (but make it as hot or mild as you like)
2 cloves garlic (crushed)
salt and pepper
Spray a large saute pan or saucepan with spray oil and gently fry the onions until soft but not coloured . Add the garlic and fry for another minute then add the curry powder and fry for another minute or two.
Add the tomatoes, stock and turkey and bring to a boil then reduce the heat and simmer until sauce has reduced and thickened. Season to taste with salt and pepper.
