Diet Coke Chicken





Ingredients
DIET COKE CHICKEN
1 X CAN OF DIET COKE 
6 TBSP OF PASSATA
2 X CHICKEN BREASTS
ONIONS, MUSHROOMS AND PEPPERS 
1X TBSP OF WORCESTER SAUCE 
I ALSO ADDED SOME HERBS AND SPICES (YOUR OWN PERSONAL TASTE)

Method






  1. COOK ONION, GARLIC AND PEPPERS FOR A COUPLE OF MINS IN FRY LIGHT, THEN ADD THE MUSHROOMS, THINLY SLICE THE CHICKEN BREAST AND FRY UNTIL GOLDEN. MIX THE PASSATA
    WORCESTER SAUCE AND CAN OF DIET COKE IN A JUG AND ADD TO THE CHICKEN AND VEG MIX AND REDUCE DOWN TILL ITS LIKE A STICKY SAUCE. TASTED LIKE A BBQ SAUCE AND SERVE WITH BOILED RICE. YUM (",)

    I THINK THIS IS MY FAVE SLIMMINGWORLD RECIPE. IF YOU ADD SOY SAUCE AND CHINESE 5 SPICE IT MAKES A LOVELY CHINESE TOO!

The Smash Pizza





SYN FREE 'SMASH' PIZZA -

BASE - 1 X SMARTPRICE MASH (20P), 250ML WATER, TSP SALT
SAUCE - FEW TBSP PASATTA, GARLIC AND MIXED HERBS
TOPPINGS - HAM/CHICKEN/BEEF AND VEGGIES AND 42G LF CHEDDAR





Method



  1. MIX THE MASH POWDER WITH THE SALT AND WATER AND MOULD TO A DOUGH. FLATTEN OUT INTO CIRCLES ABOUT 3/4CM-1CM THICK. LINE A BAKING TRY WITH GREASEPROOF AND SPRAY WITH FRYLITE AND PUT THE MASH CICLES ON. COOK FOR 15 MINS EACH SIDE AT ABOUT 190O. THEN ADD SAUCE, TOPPINGS AND CHEESE AND COOK FOR UNTIL THEY LOOK DONE.

    I HAD SOME LEFT OVER MASH MIX, I MADE THESE 6 PIZZA USING A MUG AS A CUTTER AND I WAS FULL AFTER 4, HAD TO HAVE THE OTHER 2 LATER ON AND THEY ARE JUST AS NICE COLD :)

Five Spice Chicken




Ingredients 

2 chicken breasts - cut into chunks
4 tbsp light soy sauce
2 tbsp dark soy sauce
1 tbsp sweet chilli sauce
2 garlic cloves - crushed
1 tsp Chinese five spice
1 bag stir fry vegetables
2 portions dried fine noodles
Any other veg you want to add




Method
In a bowl, mix the chicken together with the light soy sauce, sweet chilli sauce, garlic and five spice.
Heat a pan sprayed with frylite, then cook the chicken mixture until the chicken is coloured.
Add the vegetables and the dark soy sauce.
Simmer until the veg is cooked, then serve with the cooked noodles.

Beef Mince Curry (2015)






Serves 4

Ingredients

1 Onion, finely sliced (s)
1 Knorr Dark beef stockpot
1 Tsp Cumin
1 Tsp Coriander
1 Tsp Turmeric
1 Tbsp. Hot madras curry powder
1 Tbsp. Ginger paste
1 Tbsp. Garlic paste
1 Tbsp. Tomato puree (s)
400g Chopped tomatoes (s)
500g Beef Mince (5% or less) (p)




Method

In a frying pan, sprayed with frylight, cook the onion, garlic & ginger until the onions are soft, add the mince & cook until the meat is browned all over then add the stockpot, mix until it colours the beef.
Add the spices, tomatoes & tomato puree, cook for 20 mins until the mince is cooked. Serve with your favourite rice.

Beef mince in Romaine lettuce





Serves 2

Ingredients

1 Onion, finely chopped (s)
1 Knorr Dark Beef stockpot
1 Tomato, thinly sliced (s)
1 Spring onion, finely chopped (s)
1 Tbsp. Worcester sauce
2 Romaine lettuce, 1 per person, (s)
100g Wild rice
250g Lean beef mince (p)
S & P





Method


Cook the rice as per instructions on the packet.
In a frying pan, sprayed with frylight, cook the onion for 5 mins then add the mince, brown all over & break up any lumps. Add the stockpot & allow to melt, mixing to coat the mince, add the Worcester sauce, cook for 20 mins.
In the meantime cut the lettuce & wash, place on the plate, slice the tomato into thin slices & place between the lettuce, then add the spring onions.
When the rice has cooked, drain then add to the mince, mix well then place the mince in the lettuce leaves, season & enjoy.

Pete’s Biryani




Serves 4

Ingredients

½ Tsp Garlic paste
½ Tsp Ginger paste
½ Tsp Garam Masala
½ Tsp Onion salt
½ Tsp Turmeric
1 Tbsp. Sweetener
1 Chilli, de-seeded & finely chopped (s)
1 Cardamom stick
2 Large onions, finely sliced (s)
100mL Fromage frais
125g Basmati rice 
200mL Chicken stock
615g Skinless Chicken thighs (p)
Handful of Coriander leaves
S&P




Method

Wash the basmati rice several times until the water runs clear then cook for 8 mins, drain & set aside.
Pre-heat the oven on an “Eco” setting, (90C)
In a heavy frying pan, sprayed with frylight, cook the onions, ginger, garlic & chilli until the onions are soft. Add the sweetener, cardamom stick & spices, continue to cook, covered, until the onion has browned. Remove & set aside.
In the same frying pan, cook the chicken for 20 mins.
In a heavy casserole dish place a layer of the onions, then rice, chicken until its layered to the top, add the chicken stock & the coriander leaves, cover & cook for 1-30 to 1-45 mins on the Eco setting.
Do not open the lid until the cooking time is up, then remove the cardamom stick before serving, mix well. If there is still too much liquid, cook open on the stove until it has evaporated

Pastitsio







Serves 4
Ingredients

  • Minced beef
  • medium onion, diced
  • garlic cloves, minced
  • 1/2 teaspoon cinnamon
  • 1 tin of Passata
  • tablespoons flour
  • Small amount of low fat margarine (2 syns in whole dish)
  • 1 cup of skimmed milk (4 syns in whole dish)
  • 12 ounces penne pasta
  • eggs, lightly beaten
  • 112g of parmesam cheese. (HE when divided into 4 portions)





Method

  1. 1 Preheat oven to 350 degrees.
  2. 2 Cook pasta and drain.
  3. 3 While pasta is cooking, brown mince meat, add onion and garlic and cook until soft.
  4. 4 Mix in cinnamon and passata.
  5. 5 In a saucepan, melt margarine, whisk in flour and cook 1 minute, whisk in milk and simmer 20 minutes.
  6. 6 Add beaten eggs and 56g parmesan to white sauce.
  7. 7Spray frylight in an oven dish, add half pasta, top with meat mixture, add the rest of the pasta.
  8. 8 Pour white sauce over the top.
  9. 9 Sprinkle with remaining parmesan cheese.
  10. 10 Bake 60 minutes.
