Lemon and herb baked salmon





I love salmon but it can be a bit boring just pan fried all the time. This marinade is very quick it only has to marinate for 10 minutes and the salmon cooks in 25 minutes so its a speedy after work dinner.

I used 2 cloves of garlic as I love it but my husband thought it was a bit too garlicky so cut it down to one or leave it out completely if you'd rather.

Preheat the oven to Gas 6 /200 / 400


4 salmon fillets

The marinade

  • 1 tbsp lemon juice
  • 2 tsp dried parsley
  • 2 cloves garlic (crushed) or less if you prefer
  • 1/2 tsp salt
  • 1/2 tsp black pepper




Place the salmon fillets on a sheet of foil and place in a baking dish. (Keeps your dish clean) . Mix all the ingredients for the marinade together and spoon equally over the salmon fillets.

Leave to marinade for 10 minutes only, Don't leave it any longer as the lemon juice will start to 'cook' the fish if you leave it too long. Fold the foil over so the salmon are covered and place in the oven and bake at Gas 6 /200 /400 for about 25 minutes.
