Another quick midweek dinner, This also freezes beautifully for when you are rushing and just need something you can defrost quickly!
This recipe makes loads and so is a good one to serve 4 adults or two very greedy ones or eat half and freeze half. It is slimming world friendly low fat but very tasty..... enjoy!
Chili
- 1lb extra lean minced beef
- 2 onions (chopped)
- 2 carrots (peeled and diced)
- 2 sticks celery (sliced)
- 2 cloves garlic (crushed)
- 2 cans chopped tomatoes
- 2 cans red kidney beans (drained and rinsed|)
- 2 tbsp tomato puree
- 1 pint beef stock
- 2 tsp chili powder (mild or hot depends how you like it)
- 2 tsp cumin
- 1/2 salt and 1/2 tsp pepper
Place minced beef in a large pan and add the onions, carrots, celery and garlic and dry fry until veg is soft and mince is brown. Add tomatoes, tomato puree, cumin, chili and stock . Bring to the boil and simmer until the sauce is thickened, Add the red kidney beans and bring back to a simmer for a few minutes. Add salt and pepper stir well and taste to see if you need any more seasoning.
