Here is another great potato side dish to go with meals. It gets boring with mash and wedges so these are just something a little bit different. I found the recipe ages ago on the 'Pioneer woman' website and just used low calorie spray oil instead of the olive oil she uses. It's incredibly simple and very tasty.
The other thing that's good with these is you can make them in advance and cook them and leave them to one side and just reheat quickly in a hot oven to crisp them up again so can make dinner really quickly (always a bonus).
Crash Hot Potatoes
8 or more new potatoes
salt and pepper
low cal spray oil
Boil the potatoes whole in lots of boiling salted water for about 20 minutes until they are cooked. Spray a large flat baking tray with oil and place the potatoes on the tray making sure they are separate and not touching.
Get a potato masher or a fork and press down firmly on the top of each potato so the skin spilts and is crushed slightly. Spray the potatoes with oil and season well with salt and pepper.
Cook in a hot oven gas 3/ 220/ 425 for 25 minutes or more until browned and crispy.
