Sausage & Bean Casserole
- Reduced fat pork sausages (1.5 syns each)
- 3 carrots
- 3 sticks of celery
- 1 onion
- 300ml vegetable stock
- S&P
- 1 tsp mixed herbs
- 2 tsp sweetener
- 1 carton passata
- 1 can mixed beans in tomato sauce
Put your sausages in the oven to cook as normal.
Meanwhile, in a large pan, put the chopped onion, chopped carrots & chopped celery, with the stock & herbs. Bring to the boil. Season well then reduce the heat and simmer.
When the sausages are cooked, chop them into big diagonal slices (I do thirds). Then add them to the pan, with the passata, beans and sweetener.
Transfer to a casserole dish, and pop in the oven for 20 minutes or so. When bubbling, it's ready 😊
