I made this recipe after having a load of leftover green peppers and wondering what to do with them. I used the mediterranean sausages as they have the same seasonings I was thinking of and just added a few more ingredients. I had intended to crumble the sausages but they are quite dense so I chopped them up instead and they worked fine.
You could also top this with your cheese healthy extra if you liked :)
Mediterreanean sausage stuffed peppers
Ingredients
Cut off the tops of the peppers and remove the seeds then cut in half. Place in a large pan of boiling salted water for about five minutes then remove and set aside.
Spray a large frying pan with spray oil and over a medium heat fry the red onion until soft but not coloured then add the garlic and oregano and fry for a few more minutes. Add the tomatoes and simmer over a low heat for about ten minutes until started to thicken.
Add the chopped sausages and cook for another couple of minutes then add salt and pepper. Place the pepper halves in a baking dish and place in a hot oven gas 6 /200/400 for about 20-30 minutes until the top is browned.

- 4 peppers (any colour)
- 1 tin or pack of chopped tomatoes
- 2 cloves garlic (crushed)
- 2 tsp dried oregano
- 1 red onion (chopped)
- low cal spray oil
- 1/2 tsp salt
- 1/2 tsp pepper
