Jambalaya (slimming world friendly)

I have had this recipe for ages and make it quite often and it makes a vast amount so you might want to halve the recipe , I make no claims to its authenticity but it tastes very good. I took it to my Slimming World class tonight as it was a taster evening and it was popular. I used Joes sausages so they were syn free but you would have to syn any other sausages used but you could make it with quorn sausages and vegetable stock to make it both vegetarian and still syn free. 


Jambalaya

  • 1 onion (chopped)
  • 2 red peppers (sliced)
  • 1 green pepper (sliced) 
  • 2 cloves garlic (crushed)
  • 1 tin chopped tomatoes
  • 6 quorn sausages (or whatever sausages you choose to use cooked and sliced)
  • 2 pints chicken stock
  • 1/2 tbsp cajun spice mix (bought from supermarket mine is from ASDA)
  • 12oz easy cook white long grain rice
  • salt and pepper



Place the onions, peppers, garlic, tomatoes, stock and spice into a large saucepan and bring to the boil.

Add the rice and sausages and bring to the boil. Cover and reduce heat and simmer for 15 minutes. Remove from the heat and leave to stand for 10 minutes then season to taste and serve.
