Chicken cacciatore




 

Here we go another chicken dish but we eat a lot of chicken in my family so its always good to find new recipes. I'm with Nigella that I prefer chicken thighs to chicken breast for both flavour and texture but if you prefer to use chicken breasts thats fine.

This recipe is really easy and quick makes a great after work dinner, The use of celery salt is a bit different and you can just use ordinary salt if you like but its a good thing to have in your store cupboard and it lasts for ages, isnt expensive and adds a really good flavour to a lot of dishes.


I make no claims to the authenticity of the recipe I adapted a few different ones I found to make it slimming world friendly.




Chicken Cacciatore

  • 8 chicken thighs (all skin and fat removed) cut into chunks
  • 4oz lean back bacon (chopped)
  • 1 clove garlic (crushed) 
  • 1 large onion (chopped)
  • 1/2 tsp dried rosemary
  • 2 bay leaves
  • 1 can chopped tomatoes
  • 6 fl oz chicken stock (from a cube is ok)
  • 1 tsp celery salt


In a large wok or pan put the chicken , bacon and onions and cook for five minutes until the chicken is browned slightly and the onions are softer.

Add the garlic, rosemary,celery salt, stock and tomatoes and stir well put in the bay leaves and bring to a simmer, Simmer for 20-30 minutes until the sauce has reduced then remove the bay leaves and serve.
