Summer rolls

This recipe isn't complicated but it is a bit fiddly and time consuming I will be honest with you!! They are delicious and work out at just 2 syns each on extra easy. There are a lot of ingredients too not trying to put you off trying to make them or anything they are well worth the wait : ) I got the recipe from Gok Wan book  'Gok cooks chinese' . They taste very light and fresh and although not ultra low in syns they are nice for a special occasion.

Summer rolls

2 cloves garlic peeled and finely chopped
2cm piece of ginger finely chopped
(I used the frozen ginger and garlic defrosted so can save some time)
200g extra lean minced pork
1/2 tbsp fish sauce
1 tbsp rice vinegar
salt and white pepper

To assemble rolls

  • 12 rice paper sheets (16cm diameter)
  • 12 leave of fresh mint
  • 1 bunch fresh coriander leaves
  • 1 large peeled carrot cut into thin matchsticks
  • 2-3 spring onions cut into matchsticks
  • 1 handful beansprouts
  • 1/4 iceberg shredded lettuce
  • 200g cooked fine rice noodles (rinsed in cold water and drained)
  • juice of 2 limes
  • fish sauce




Heat a wok or large frying pan and add the minced pork, ginger and garlic and stir fry till pork is cooked through. Add fish sauce, vinegar and a little salt and pepper and stir well cook for a minute or two stir well then set aside to cool.

Get a bowl of warm water and a tea towel ready and briefly dip the rice paper sheet in the warm water till it starts to soften then lay it on the tea towel. Place a mint leaf and some coriander onto the roll then add a little carrot and spring onion, few beansprouts and a little lettuce , Add a tbsp of noodles and pork mixture then drizzle a little lime juice and fish sauce on.

Fold over the two side of the rice paper then fold down both ends (you can use a little water to stick them down if you need to )

Repeat the process until done. You can of course lay out all the ready ingredients and get people to make their own rolls if you want to.

Like I said it is very fiddly but they do taste delicious, I serve them with some dark soy sauce mixed with a little lime juice as a syn free dipping sauce.
