Beef Goulash in the slow cooker (slimming world friendly)





Now its getting colder its time to start making lots of warming dinners and this is a great one, You can make it in the slow cooker so throw it all in and leave all day for when you get in from work or make it in a saucepan and simmer it on low for a few hours. If you like it spicy make sure you buy hot paprika or smoked if you like it smoky or just regular paprika is fine too. I usually serve with some boiled or mashed potatoes and some carrots or cabbage for your superfree. Of course if you want to make a vegetarian version use the quorn beef style strips but add them near the end of cooking. 

Beef Goulash

  • 1lb diced lean braising steak
  • 1 large onion (sliced)
  • 2 red peppers (sliced)
  • 1/2 pint beef stock
  • 1 clove garlic (crushed)
  • 2 tbsp tomato puree
  • 1 can chopped tomatoes
  • 2 tsp paprika
  • salt and pepper



Put everything apart from the salt and pepper into the slow cooker mix well and cook on low for about 7 hours on high or about 4 depending on your slow cooker. (Some run hotter than others). After the cooking time remove the lid and cook on high for another 1/2 hour to 1 hour so the sauce gets to reduce and be thicker. Season well with salt and pepper to taste.
