Creamy lemon bars (Not SW friendly)

These are my 'go to' easy bars to make they are delicious and so quick and easy to make. I don't know where I had the recipe from but it's a firm favourite  (not Slimming world friendly)

Creamy lemon bars

  • 1 can condensed milk
  • 2 tsp grated lemon zest 
  • 1/4 cup lemon juice
  • 1 1/4 cups flour 
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter
  • 1/4 tsp baking soda
  • 1/4 tsp salt 

Heat oven to 375/190/gas 5 . Brush an 8x8 pan with oil. Mix milk, lemon juice and zest in a bowl and whisk for a minute until thickened. 

In another large bowl mix everything else until combined. 

Press half the crumbly mixture into base of pan and press down and bake for 10 minutes. 

Spread milk mixture over the base and sprinkle rest of crumble mixture on top. Press down gently, Bake for about 20 minutes until golden brown. 

Cool completely then cut into pieces 4x4 (16 bars) They are so good and very rich. : )
